Introduction

Ingredients

500 ml (slightly more than 2 c.) flour
2 sticks butter, minus 2 TBSP
100 ml sugar (can add to 150 in US)
1 egg
1/4 tsp baking powder
Optional: small pinch of salt
Directions
1. Put all dry ingredients in food processor. Add egg. Let dough rest in refrigerator for a few hours or overnight.
Roll out dough and cut out cookies with small cookie cutters.
1. For "leaves" ("löv"), brush with beaten eggs and either sprinkle with or dip into mixture of sugar (preferably Swedish Pearl sugar) and chopped blanched almonds.
2. For "envelopes" ("brev", though referred to as "tacos" by our daughters), cut out small rounds, add a small amount of raspberry jam, seal with beaten egg, fold over, leaving a small edge exposed. Make three light indents with pizza cutter or knife along the jutting edge.
Brush with beaten eggs. Optional: Sprinkle with pearl sugar.
Bake both cookies at 375 F, reg. (350F, conv.) for about 8 minutes.
Both these cookies were traditional Christmas cookies in my home in Sweden.
