Introduction

A low fat salad dressing that I vary this recipe with different fresh herbs and vinegars and even oil to add depth of flavor depending if it's on potatoes, lettuce, tomatoes, or grilled veggies. Ingredients

    1 cup diced raw onions
    Salt to taste
    .5 cup Extra Light olive Oil
    .25 cup Rice Vinegar
    3 T. Balsamic Vinegar
    .25 cup chopped fresh oregano


Tips

You may use warm for potato salad or grilled veggies.


Directions

Saute onions or microwave in a bit of the olive oil and salt until translucent. Allow to cool. In blender or food processor blend until smooth. Chill before using.
