Ingredients

8 eggs
1/2 cup chopped onion
1/4 cup chopped green bell peppers
1 cup diced ham
2 tbsp butter
3 slices American Cheese 2%
salt and pepper to taste
Tips
I make this and then I have a ready to go breakfast for the next couple days. Calories can be altered by using leaner ham or butter substitute. This is also a good way to stock up on your veggies. Toss in as many veggies and different kinds of veggies as you like (be sure to account for them in the calories) and enjoy
Directions
heat skillet over med. heat and add butter to melt. Add ham to skillet and brown. Once ham is to desired color add onions and peppers. (I like mine crunchy so I do not cook mine much. For softer veggies they can be added before ham is brown) Once veggies and ham are heated add eggs over meat mixture, salt and pepper, and smash up the eggs to scramble them. Once eggs are almost cooked through add cheese slices on top and cover, continuing to cook for an additional 2-3 minutes.
