Ingredients

    8oz lentils
    2 garlic cloves
    1 dried bay leaf
    8 oz gluten free penne
    1 tbsp olive oil
    7 oz leeks white and pale green parts only, slived into 1/4 inch rounds, washed well and drained
    1 tsp chopped fresh thyme
    coarse salt and prepper
    7 oz spinach

Directions

cook lentils, 1 clove garlic, bay leaf cook 20 25 min. drain and discard garlic and bay leaf

cook pasta according to instructions, save 3/4 cup liquid

mince remaining garlic, saute, glarlic, leeks, and thyme, cook about 5 min. add salt and pepper.

add spinach and served past cooking liquid to pan , cook, tossing to wilt spinach,a bout 2 minutes. pour mixture over past and toss to combine. Serve immediatley,
