Ingredients

    1 cup mashed banana
    1/2 cup melted coconut oil
    1/2 t stevia liquid
    1/3 cup brown sugar
    2 eggs
    1 1/2 t baking powder
    1/4 t baking soda
    1 1/4 t ground nutmeg
    3/4 t salt
    1 t vanilla extract
    2 cups whole wheat flour
    2/3 cup neutral protein powder like RAW protein powder (or another 2/3 cup whole wheat flour)
    1 cup chopped toasted walnuts
    1 cup almond milk

    topping:
    1 t ground cinnamon
    2 t smashed demerrara sugar cubes (with some small chunks left) or sugar

Directions

Preheat to 425, put 12 paper muffin cups in muffin pan and spray cups. Mash bananas with coconut oil, stevia and brown sugar in medium bowl. Add eggs and mix well. Add baking powder, baking soda, nutmeg, salt and vanilla and mix well. Alternately add flour, protein powder and almond milk. Add toasted walnuts.

Spoon batter into muffin cups, they will fill mostly up to the top (very full, its OK--they don't run over!). Mix cinnamon and sugar topping and sprinkle on top.

Bake 18-20 minutes until clean toothpick. Cool on rack
