Introduction

Ingredients

    4 large red potatoes cut into largish bite-sized chunks
    1/2 bag of baby carrots
    1 large yellow onion cut into wedges
    4 boneless skinless chicken breasts
    5 Tbsp. cornstarch
    2 cup chicken stock, cold or room temp
    3 tbsp tamari (low salt soy sauce)
    2 tbsp fresh minced sage
    1 pinch salt
    1 tsp pepper

Tips

Chicken may get a little dry if you use the low setting and leave it for 10 hours while you work (like me), but it still tastes yummy. My best recommendation would be to do the low setting when you can stop it at 6 hours.


Directions

Spray inside of crock pot with cooking spray. Add veggies to the bottom, then chicken spread over them. Whisk the broth, cornstarch and spices together until mixed. Pour broth mixture over the whole thing (it is ok if it doesn't cover completely). Set crock on high for 4 hours or low for 6-8 hours.

Prep time: 5 min to cut the veggies, 5 min to mix the broth, 5 minutes to get it all in the pot.
