Ingredients

    1/2 lb tuna, cut into one inch cubes
    1/2 pound 16/21 size shrimp, cleaned and deveined
    1 cup fresh pineapple chunks, plus 2 tbs juice
    1 medium red bell pepper, cut into chunks
    1 medium green bell pepper, cut into chunks
    8 cherry tomatoes
    1 medium vidalia or sweet onion, cut into chunks

    2 tsp olive or sesame oil
    grated lime peel from 1 lime
    juice of one lime
    2 tsp grated fresh ginger
    1 tsp reduced sodium soy sauce
    1 tsp Asian chili paste
    2 cloves garlic, minced

Tips

You can substitute any firm fish for tuna. Mahi mahi would work well, too.


Directions

Alternate pieces of fish, shrimp, pineapple and veggies on heat resistant skewers.

Combine oil, 2 tbs pineapple juice, lime peel, lime juice, ginger, soy sauce, chili paste and garlic in a small bowl. Brush half the mix on the kebabs.

Preheat grill or indoor grill pan to medium high heat. Grill kabobs 3 minutes on each side or until fish flakes easily, brushing with marinade as it cooks.
