Ingredients

    1 can Garbanzo beans rinsed & drained
    1/2 small onion finely diced
    1/2 cucumber finely chopped
    2 Tbsp light Mayonnaise
    1-2 Tbsp lemon juice
    salt & pepper to taste

Tips

I love this on a whole wheat pita with some salad greens and feta cheese!


Directions

Mash beans with a fork or potato masher. Add the rest of the ingredients and mix well. Fill a whole wheat pita or other sandwich material and enjoy!
