Ingredients

    1 pound fresh sweet strawberries, sliced
    1/3 cup sugar
    1/2 tablespoon fresh lemon juice
    2 fresh, large egg whites
    1/2 teaspoon pure vanilla extract

Tips

- I used Splenda instead of sugar and doubled the serving size because it's just me eating it ... no room in the fridge for 8 servings!


Directions

1. Place everything in food processor. Process 20 minutes, stopping once to allow the machine to rest a bit and to scrape the sides using a spatula. Processing in a food processor for so long achieves a really smooth texture, so no need to strain, and also adds air, which turns this mixture into a mousse.

2. Transfer to individual dishes. Place in fridge for 8 hours to chill and set. You could also freeze these and get a sort of a nonfat parfait, but I think the mousse is better.
