Ingredients

    3 cups chopped green cabbage
    5 cups diced raw potatoes
    1 cup chicken broth
    2 stewed chicken thighs, bones and skin removed
    2 stewed chicken legs, bones and skin removed
    .5 stewed chicken breast, bones and skin removed
    1 red bell pepper
    4 raw carrots
    1/2 onion
    1.75 cups cooked brown rice (long grain)
    1 tbsp sea salt
    1 tsp black pepper
    4 cloves garlic, crushed
    2 springs rosemary
    1 branch fresh basil
    8 cups water

Tips

I serve this recipe with homemade wheat rolls kneaded and risen in the bread machine, shaped and tossed into the oven halfway through. I also make the soup in my crockpot most days (takes 2 hours that way, but I don't have to watch it for drying out or boiling over.


Directions

First, puree the carrot, pepper, onion, rosemary, garlic, and basil in the chicken broth. Next, toss the veggies, chicken, puree, salt, pepper, and water into a stock pot. Bring to a boil and let simmer for 40 minutes. Add rice and let simmer 20 minutes more. Enjoy!

Serving Size: Makes 8 equal portions, about 2 cups each
