Introduction

Ingredients

1 medium zucchini
1 tblsp sugar
1 tblsp low sodium soy sauce
1 clove of garlic
3/4 tsp dried oregano
"Pho Mayo"
2 Cups Greek Yogurt
1 1/2 tsp Onion Powder
1/2 tsp Worcertiershire Sauce
1/2 tsp dry mustard
3 tsp sugar
Tips
The "mayo" mix is a work in progress, you can also add vinegar and hot sauce to adjust taste.
Directions
Combine Yogurt, onion powder, wochertiershire sauce, and dry mustard. Taste and adjust seasoning until it tastes like mayo.
Shred your zucchini and place in a microwave cooker (or a bowl covered with a paper towel with a little water for 6 minutes or until tender.
Drain and transfer to a food processor or blender
Process until smooth
Add the garlic, sugar, soy sauce and oregano and process until blended.
Transfer to a serving bowl and stir in yogurt mixture. Chill at least one hour before serving
