Introduction

Ingredients

2/3 cup fresh-picked, shelled purple hull peas;
1 tablespoon minced or finely chopped fresh onion;
1/4 tsp. black pepper;
pinch of each: garlic powder, dried parsley (crumbled), dried oregano (crumbled);
1/4 of 1 small dried bay leaf;
Butter Buds;
salt to taste.
Tips
If you can find "bacon salt", use it instead of regular salt after peas are cooked. Use it sparingly for that Southern flavor!
Directions
Rinse shelled peas well. Pick out any broken or discolored peas; drain. Spray a small pot with non-stick cooking spray. Add onions and cook over medium heat, stirring constantly until soft. Add peas to pot; cover with cold water. Stir in spices except Butter Buds and salt. Bring to a boil over medium-high heat. Reduce heat, cover, and simmer approximately 45 minutes or until cooked. Pick out the bay leaf (if you can find it!). Add Butter Buds and salt to taste; stir well. Using a spoon, smash some of the peas against the side of the pan and stir to thicken. Eat and enjoy!
