Ingredients

    1 medium zucchini
    4 patty squash
    2 tbsp oregano
    2 tbsp marjoram
    1 tbsp parsley
    2 tbsp basil
    6 grape tomatoes
    3 tbsp olive oil
    3 tbsp Country crock light butter

Tips

I used patty squash, but any type of summer squash could be used. I also used fresh tomatoes, but canned could be used.


Directions

Chop zucchini and patty squash into quarters and slice into small chunks. Heat olive oil in skillet; add squash and garlic and saute until tender. In separate bowl, add spices and tomatoes and mix. Add to squash mixture when squash is tender. Heat through until warmed completely. Add butter if desired for extra flavor.
