Ingredients

    16 oz. fillet of salmon (approximately)
    1 T. lemon juice
    2 T. pineapple juice

    2 T brown sugar
    1 t. salt
    1 T chili powder
    1 T cumin

    3 slices canned pineapple (canned in pineapple juice)

Tips

Adjust amount of chili powder and cumin to your preference.


Directions

Wash salmon. Combine salmon, lemon juice, and pineapple juice in a bag and refrigerate for 1 hour.
Preheat oven to 375 F. In a separate bowl, combine cumin, chili powder, salt and brown sugar. Discard liquids and place salmon in baking dish. Top with spice mixture. Then place pineapple slices on top.
