Ingredients

    1 tbsp extra virgin olive oil
    2/3 cup liquid egg whites
    1 Italian tomato
    1 cup turnip greens
    (can be substituted with baby spinach)
    1 golden pearl onion
    1 tsp crushed garlic
    0.5 tsp crushed red pepper

Tips

Eat with a high fiber cracker, like Wasa Light Rye


Directions

Stir the veggies first in the olive oil.
When they are to taste, add the 2/3 cup egg whites.
When the egg whites are solid enough (for your personal taste) slightly stir everything together and slide on a plate.
