Ingredients

6 oz natural peanut butter(I used Naturally More PB
7/8 cup(175g) granulated sugar
1 egg
1 teaspoon vanilla
2 cups oat flour + 1/4 cup divided(*see tip)
2 teaspoon baking powder
1 teaspoon salt
2 cups apples, chopped
1/2 cup buttermilk
*optional brown sugar
Tips
*TIP Make your own oat flour at home. Put old fashioned oats into a food processor, and blend until flour consistency is reached.
Directions
1.Preheat the oven to 350ºF.
2.Cream peanut butter, and 7/8 cup of the sugar until throroughly combined
3.Add egg and vanilla and beat until combined and set aside.
4.Toss apples with ¼ cup of flour in a separate bowl.
5.Whisk together the remaining flour, baking powder and salt.
6.Alternate adding the buttermilk and the flour mixture to the peanut butter/sugar mixture, ending with buttermilk.
7.Fold in the apples, leaving excess flour in the bowl.
8.Pour the batter into a greased 9-inch square baking pan and sprinkle batter with optional brown sugar.
9.Bake for 35 minutes and up to 40 minutes, checking with a toothpick.
10.Let cool at least 15 minutes before serving.
