Ingredients

    4 cups red leaf lettuce
    20 (2-inch) cubes of watermelon, seeded, drained
    2 Bartlett pears, peeled, cut bite-size
    20 bite-size broccoli florets
    2 tablespoons Honey-roasted Almond accents

    Dressing Ingredients
    ¼ olive oil
    2 Tbsp apple cider vinegar
    1 Tbsp sugar/Stevia
    ¼ tsp Cajun seasoning
    1 tsp mustard
    ½ tsp lemon zest

Directions

1. Bring to small pot of water to a boil. Blanch broccoli for 3 minutes, set aside to cool.
2. Arrange lettuce on 4 luncheon plates. Plates watermelon, pears, and broccoli florets among leaves. Sprinkle with almonds.
3. Combine dressing ingredients in small Mason jar with lid. Shake to combine ingredients.
4. Drizzle dressing atop salad.
