    1 tbsp corn starch
    2/3 cup low sodium chicken broth
    1 tbsp low sodium soy sauce
    1/4 tsp ground ginger
    1 cup fresh mushrooms
    1 clove garlic
    1 medium onion sliced
    3/4 cup sliced red bell pepper (or yellow or green)
    1 tsp olive oil
    1 cup bean sprouts (fresh)
    1 cup cooked chicken (left overs)


I often make this with left-overs. There is no reason that you cannot make it with any left over veggie, meat, etc. Make it your way!


Mix together in small bowl; corn starch, broth, soy sauce and ginger until smooth and set aside.

In non-stick skillet add olive oil, onion, mushroom, peppers and celery. Cook until soft or desired crispness.

Add garlic and bean sprouts. Cook and stir 2 minutes longer.

Add corn starch mixture and simmer until thickened, while stirring.

When sauce is as thick as you like, add chicken. Heat until hot.

* Serve with whole wheat spaghetti noodles or as you like.
