Ingredients

- 4 Tbsp cornmeal
- 42g all-purpose flour
- 2tsp (canola) oil
- 1/2 cup warm water
- sprinkle of yeast
- baking powder and/or soda
- optional: vinegar (if using baking soda)
- pinch of salt
- sprinkle of cinnamon and paprika (and/or cayenne)
Tips
This is a savory waffle; serve with salsa, a fried egg, roasted vegetables, etc. Or add ~2 tsp honey or maple syrup to the batter to make it sweeter, and add about an ounce of nuts and/or berries.
Directions
1. Sprinkl flour with spices and yeast in a small bowl. Add water and stir until blended/mixed. Cover with plastic wrap or similar and set in a warm place until the mixture bubbles and rises. After it is nearly doubled in size, place in the refrigerator until you wish to complete the recipe.
2. Heat waffle iron.
3. Add cornmeal to the flour mixture and stir until smooth. Add salt and oil. For lighter/airier waffles, and 1 tsp baking powder, or a pinch of baking soda (about 1/4 tsp) and splash of apple cider vinegar. Stir.
4. Spray waffle iron with cooking spray and cook waffle batter according instructions, probably ~4 minutes (2 minutes/side).
Serving Size: Makes one large waffle that you can cut in half; meant as two servings.
