Introduction

Simple to make, tasty, fairly healthy, and cheap - not much else you could ask for! Must be made ahead of time, though - you can't throw it together 20 minutes before dinner. Ingredients

    1.5 lb Beef Roast
    3 small Potatoes
    2 medium Carrots
    1 Celery Stalk
    1/4 large Onion

Directions

Chop all ingredients into slightly large bite size pieces. Mix in slow cooker. Add a bit of water (about 1/4 c) to keep from sticking to the bottom. Cook on low for about 8 hours. Add salt and pepper to taste (not included in ingredients).

Serving Size: Makes 5, 1/2-cup servings
