Introduction

This is Sugar Free to the extent that no Sugar has been added. Nutritionally there are some sugars from the pineapple and apple sauce and even the cake mixe which is suppose to be sugar free. The Carbs are pretty low or exceptable for a snack. I looked at 1/3 fat cream cheese and it was lower in fat and calories but higher in carbs and sugars. You could go with a sugar free or fat free whipped topping and lighten this up. The nuts event though just a few do add extra calories. I made the serving size larger than the cake mix because I think it is more realistic to cut 15 sqaures from a 13 X 9 cake pan. Ingredients

    CAKE
    *Dole Pineapple Tidbits 100% Pineapple juice, 1.5 cup
    *Diet Mountain Dew, 12 oz
    Pecans, .5 cup, halves
    Mott's Healthy Harvest Applesauce, Granny Smith, 111 grams(1 small container from a 6 pack)
    *Pillsbury Moist supreme Sugar Free Yellow cake

    ICING
    1 pgk of cream cheese
    1/2 cup Splenda (24 tsp = 1/2 cup)
    2 Tbsp of juice from canned pineapple

Tips

a lowfat or sugar free whipped topping would reduce the calories some.


Directions

Preheat oven to 325. Spray 13X9 cake pan with Pam or equivalent. In a bowl add cake mix, apple sauce and half of soda. Begin mixing with electric mixer add soda as needed to get consistancey of cake batter. Then stir in nuts and drained pineapple. Pour batter into pan and bake at 325 for 40 to 45 minutes. The cake mix box instructions say to cook a max of 38 minutes but I had to go to 45.

For Icing in a bowl,have cream cheese a near room temp and add 1/2 cup splenda and 2 tbsp of juice from pineapple. Mix to desired consistancy. Wait until cake cools to top with icing. Icing will dry out if cake is left uncovered for too long.

Serving Size: makes 15 servings in a 13 X 9 cake pan.
