Number of Servings: 4


    •3 cups watermelon, seeded and pureed in blender
    •1 cup of seeded watermelon, diced small
    •1 cup of seeded tomato, diced small
    •1 cup peeled, seeded cucumber, diced small
    •1/2 cup red or green bell pepper, diced small
    •2 tablespoons lime juice
    •1 small handful cilantro leaves
    •1 teaspoon minced ginger
    •1/2 small jalapeρo seeded and minced (I put it in the blender with the watermelon)


If you are serving at a party, you may want to put ice in a tray or bowl, then place another tray or bowl on top of the ice to keep chilled. I served my gazpacho in mini cups at a baby shower.


1. In a large bowl, combine the watermelon puree with the rest of the ingredients.
2. Season to taste with salt and pepper. Refrigerate to chill before serving
