Ingredients

    1 15 oz can black beans, rinsed and drained
    1 15 oz can Northern white beans, rinsed and drained
    1 15 ozcan dark red kidney beans
    1 15 oz can 100% pure pumpkin
    1 15 oz can diced tomatoes
    1 10.5 oz can of diced tomatoes with green chilies
    (like Rotel)
    1 8oz can tomato sauce
    3/4 lb ground beef, browned and drained
    1 small green pepper, seeded and diced
    1 med onion, diced
    2 tsp chili powder
    1 tsp cumin
    1/2 tsp garlic powder
    1/2 tsp onion powder
    1/4 tsp salt
    1/8 tsp red pepper
    15 oz water

Tips

Serve with grated cojack cheese or homemade cornbread. A great way to sneak in some extra vitamin A and lots of protien!


Directions

Brown ground beef and add onion and green pepper. Drain. Add all tomatoes, pumpkin and spices and heat through. Rinse and drain all the beans. Add beans, stir and heat through (about 20 minutes).
