    *Whole Wheat Flour, 1 cup
    *Flour, white, .66 cup
    Sugar, .5 cup
    Body Fortress Super Advanced Protein Powder VANILLA, 1 serving
    Baking Powder, 2 tsp
    Salt, .5 tsp
    *Skim Milk, 1 cup
    Applesauce, unsweetened, 2 Tbsp
    Olive Oil, 2 Tbsp
    Lemon juice, 2 Tbsp
    Egg, fresh, 1 large
    Grated Lemon Rind, 1-2 tsp
    Vanilla Extract, 1 tsp
    Blueberries, frozen (unsweetened), 1.33 cup, unthawed


*sprinkle tops of muffins with wheat germ before baking for added texture and nutrition.


Preheat oven to 375. Spray muffin tins with cooking spray. In a small bowl stir together milk, oil, applesauce, lemon juice, egg, lemon rind, and vanilla extract.
In a large bowl, combine flours, protein powder, sugar, baking powder, salt and cinnamon.
Pour the liquid mixture into the flour mixture and stir just until moistened.
Fold in blueberries. Pour batter into muffin cups filling each 2/3 full. Bake 20 minutes or until golden.
