Ingredients

    8-9 beaten eggs
    1 diced onion
    1 cu diced mushrooms
    2 cups broccoli slaw
    1 grated zucchini
    1 cup sharp cheddar cheese
    1/2 cup grated Parmesan cheese
    1/2 cup cottage cheese
    1 tbsp olive oil




Tips

any mixture of veg will do. The amount of cheese is entirely up to you.


Directions

mix all items, except oil together. Grease muffin tins with oil and fill 1/2 to 3/4 full of mixture. bake @ 350 for 30 mins or until sides brown.
