Number of Servings: 4

Ingredients

    5 Whole ripe Tomatos
1/2 cup Chopped Red Bell Peppers
1/2 cup Chopped Green Bell Peppers
    1/4 cup Chopped Onions
    1/4 cup Mushrooms
    2 Garlic Clove Minced
    1 Tbsp Fresh Parsley
    1 Tbsp Olive Oil
black pepper and salt to taste

Tips

I have done this receipe different ways each time just play around with veggies and throw in whatever you think will taste good.. The key is to prepare the tomatos as I entioned and add italian seasonings like parsley, oregano, basil and you'll have an awesome sause.

Directions

Boil some water in a large pot and while the water is boiling, with a knife make an "X" on the bottom of each tomato, this is to help you peel the skin after boiling them for 1 minute. After boiling the tomatos place them in ice cold water for another minute to stop the cooking process then peel them and chop them. Sometime between all this you can chop all your other ingredients. In a large pan heat the olive oil on medium heat then grill the garlic and onion for a minute them add the bell peppers and muchroom until they are tender. Add the chopped tomatos at the end, throw in the parsley black pepper and salt. Simmer for 30 minutes and serve oven pasta, meatballs or whatever you want. Enjoy!
