My attempt to make one of my favorite things healthier. My attempt to make one of my favorite things healthier.

Ingredients

    1 box (14 oz) King Arthur's Flour blueberry sour cream scone mix
    3.5 oz fresh avocado (about a half cup)
    1/4 cup egg whites
    1/4 cup water
    1/2 cup blueberries

Tips

I make this in a pie pan and cut in eighths.


Directions

Mix all ingredients - will be like dough (not runny). Spread into greased pie pan and bake for 20-30 minutes at 350.
