Ingredients

    24 oz. cream cheese
    2 scoops whey protein powder, vanilla (56 grams)
    30 drops liquid stevia
    1/2 c. erythritol
    1 Tbs. Vanilla extract
    3 large eggs
    1 Tbs. lemon juice, or the juice from one lemon
    1/4 tsp. salt

Tips

You could use chocolate whey protein powder or any other flavor you like, adjust flavorings accordingly, use your imagination!


Directions

Place cream cheese in a glass or ceramic bowl & microwave for 20 seconds to soften. Move to large bowl of standing mixer. Add whey protein powder, vanilla, eggs, lemon juice & salt. Mix at medium speed for about three minutes or until batter is fully blended, scrapping down sides of bowl as needed. Preheat oven to 300 degrees F. Grease a nine inch oven safe pie plate with non-stick spray. Transfer batter evenly into pie plate. Bake for 55-60 minutes. Cool on rack for one hour then in refrigerator for three hours before slicing. Serve with fresh berries & whipped cream, if desired.
