    3 egg whites (large)
    1 whole egg (large)
    6 cherry tomatoes, cut in half
    1 tsp Mrs. Dash
    Cooking Spray


Add whatever veggies you'd like. I will add spinach and mushroom to the tomato next time.


Spray a cooking dish (I used a mid sized pyrex glass bowl -approx 5 inches in diameter) with spray. Whisk the whole egg and add to remaining egg whites. Place in dish.

Sprinkle with Mrs. Dash, arrange tomatoes cut side down. Rip one thin slice of swiss cheese into small pieces and sprinkle around.

Bake at 350 degrees for 15-20 minutes, or until the center is not longer loose.

Loosen sides with a fork or butter knife, then use a spatula to place onto plate. Could be eaten as one breakfast, or with additional foods and shared.
