Ingredients

    4 cups zucchini sliced length wise...about 4 medium
    1 jar of Spaghetti/Marinara Sauce (2 cups)
    1 15 oz canned tomatoes drained
    8 oz Mozzarella cheese, part skim shredded
    1/2 cup grated Parmesan Cheese
    12 - 16 ounces Lean Ground Beef, browned and drained
    1 medium onion chopped
    2 - 3 cloves of garlic pressed

Directions

slice zucchini into long strips
brown meat and drain, add onions chopped
add tomato sauce and canned tomatoes and cook with meat
layer sauce, zucchini, and cheese...repeat into a 9 x 13 pan. Bake till zucchini is tender and cheese is melted

Serving Size: makes 8 squares (4 x 5 inch)
