Introduction

Number of Servings: 8

Ingredients

    1 frozen or refrigerated pie shell
    4 sliced tomatoes
    10 fresh basil leaves
    2 T chopped chives
    1 cup sour cream
    1 cup shredded Parmesan cheese
    1 cup shredded cheddar cheese

Tips

Make sure to drain the tomatoes well. If you have left overs I put a paper towel underneath the crust to absorb the moisture.I use different colors of tomatoes because we grow heirloom tomatoes. Serve with a salad and you have a yummy meal!


Directions

Pre-bake pie shell. Slice tomatoes and drain. I put them on paper towels and sprinkle with a little salt to get them dry or the pie will be mushy. Drain about 15 minutes. Mix the sour cream with the cheeses. After the shell is baked layer the tomatoes with the basil and chives. Put the cheese mixture on the top of the tomatoes. Bake approximately 30 minutes or until pie is lightly browned.
