Ingredients

    1 whole Joseph's Flax, & Oat Bran & Whole Wheat pita bread
    1/4 c. (2 oz.) Oikos Plain Greek Yogurt
    1/4 t. cinnamon
    1/4 t. nutmeg (just a shake)
    1 t. honey
    1 t. full-flavored coconut oil
    1/2 cup pitted and sliced fresh cherries
    1/8 c. (2 T.) chopped walnuts

Tips

Spice it up to serve. If eating at home, warm in microwave for 15 seconds, slice into fourths and eat like pizza.

I use Louanna coconut oil which is cheaper and has no scent or smell for savor dishes. I prefer coconut oil that smells and tastes like coconut oil for "fruity" recipes or desserts. For this recipe, I use an expensive coconut oil from the Whole Foods Store. It smells heavenly, and has a light coconut taste.

Or, if you are on the run, take the whole wrap with you, with lots of napkins.

If you are taking it with you to eat later, mix everything except the pita and refrigerate the night before in a "to go" container. Place the pita in a zip plastic bag. Add a spoon to make your wrap or eat the cherry yogurt mixture with it with the pita on the side. This is a favorite to take on a sunset picnic at the gulf. Add an insulated glass of brewed tea and it is wonderful.


Directions

Mix yogurt, cinnamon, nutmeg, and honey. Spread on the pita bread. Pit and slice the cherries. (slice thinly if you plan to roll up) Arrange the cherries on the pita. Sprinkle with chopped walnuts.

Serving Size: 1 whole pizza for 1 serving
