Introduction
This is one of my mother's recipes. This was a favorite growing up. I updated it by using the textured vegetable protein instead of a pound of ground beef. While we're not vegetarians, we like to use this product whenever possible, because it is low fat and stores at room temperature on a shelf. This is one of my mother's recipes. Ingredients

3/4 cup Morning Moo's Textured Vegetable Protein Beef
1-1/2 cups water
2 Tbsp. olive oil, divided
3 Tbsp. onions chopped
3 Tbsp. celery, chopped
2 1-lb. cans pork and beans
1 14.5 oz. can stewed tomatoes
1/4 tsp. pepper
1 tsp. prepared mustard
Directions
Mix "beef" with water and bring to a simmer. Cook until water is absorbed approximately 20 minutes.
In the meantime, spray a non-stick pan with pan spray. Add 1 tsp. olive oil to pan and cook onions and celery until tender. Add beans, tomatoes, mustard, and pepper. Simmer for 30 minutes, stirring occasionally to prevent scorching.
When the beef is ready mix in the olive oil, and add to the bean mixture.
Serving Size: Makes 8 1-cup servings
