Ingredients

    1 Tbs olive oil
    One large onion, chopped
    4 garlic cloves, crushed
    1 lb lean ground beef (or turkey)
    2 28-oz cans crushed tomatoes
    800 grams (about 2 lbs, or one big bag) frozen spinach, thawed
    1 Tbs oregano
    1 tsp basil
    salt, pepper, paprika, garlic powder to taste
    250 grams (about 1/2 lb, or half a package) dry whole wheat spaghetti

Directions

Heat the olive oil in a large heavy-bottomed pot. Sautee the onion and garlic in the oil until translucent, then add the beef and sautee until browned. Add the tomatoes and spinach (do NOT drain), then add the herbs and spices and bring to a boil. Finally, add the uncooked pasta. Reduce to a simmer, cover, and cook until pasta is tender. (You may need to add some water, but I find the liquid from the tomatoes and spinach is enough.)
