Introduction

Number of Servings: 8

Ingredients

    2c shredded zucchini
    1 med banana mashed
    1/3 cup old fashioned oatmeal
    1/3 cup flour (or half white and half wheat flour)
    1 egg
    1 T ground cinnamon
    1 t baking soda
    1-2 oz 1% milk
    1/2 to 1 cup fresh berries

Directions

Mix all ingredients, adding just enough milk to mix batter. Spray pan with Pam and diving batter into
eight pancakes. Fry till nice and brown. They are
good cold and well as warm.

Serving Size: makes 8 sm cakes
