Yummy potatoes that you don't have to feel guilty about! You can customize the spices and adjust bake times/temps with other foods you may have in the oven. Ingredients

    Red Potato, 680 grams (1.5#)
    Onions, raw, 1 cup, chopped
    *Peppers, sweet, red, fresh, .5 cup, chopped
    Olive Oil, 2 tbsp
    Parmesan Cheese, grated, 2 tbsp
    Sugar, 1 tbsp
    Salt, pepper, paprika, garlic power, red pepper (to taste)

Tips

Using parchment paper can eliminate sticking if you have it on hand. If you like a bit more carmelization... broil the last 3 minutes or so.


Directions

Preheat oven to 350 Degrees.
Dice potatoes, onions and red peppers into 1/4 - 1/2 inch pieces.
Put all ingredients into a Gallon size Ziploc Bag and SHAKE.
Pour onto a baking sheet lined with foil and sprayed with cooking spray (even better if you have parchment paper... NO STICKING).
Bake for 45 minutes.

Serving Size: Makes 4, nice sized servings
