Ingredients

    Butter, salted, 2 tbsp
    Red Potato, 200 grams
    Mushrooms, fresh, 100 grams
    Onions, raw, .25 medium (2-1/2" dia)
    Broccoli, fresh, .5 stalk
    Gypsy pepper
    Red Ripe Tomatoes, .75 cup cherry tomatoes
    Trader Joes Turkey meatballs, 4, cut into small pieces and already thawed

    Egg, fresh, 6 large
    Half and half, 3 Tbsp
    (scrambled together)

    Parmesan Cheese, grated, 3 tbsp, for topping

    All veggies should be diced!

Directions

Heat oven to 425 degrees. Melt butter in a square baking dish. Put potatoes into hot buttered dish, cook for about 6 minutes. Add mushrooms and onion and cook for another 8 minutes. Add broccoli, pepper, and tomatoes, cook for 10 minutes. Add the cut up turkey meatballs. Poor the eggs mixed with the half and half over and allow to settle evenly. Bake until set, about 10 more minutes.

Serving Size: Makes about 5 1.5 cup servings
