Ingredients

    one can(28 oz) Hunt's Whole Peeled tomatoes, blended to break up
    3 cloves garlic, thinly sliced
    1 onion, chopped
    3oz vodka
    1/2 c lowfat sour cream
    1/2 c parmesean, grated, or to taste
    1 box rigatoni
    4 Johnsonville hot sausage links

Tips

you could also do this with less sausage to make it healthier. i just used what i had left in the package. The flavor of the hot links goes a long way!

I think next time i'd also like to add mushrooms in the beginning. that would be delicious!

The vodka cooks right out so don't be worried about your food tasting like alcohol :)

I mixed some of the parmesean into the sauce and some sprinkled on top for garnish. if you use high quality parmesean, you wont have to use as much as the flavor is more prevalent!


Directions

boil a large pot of water for pasta. meanwhile, Sautee sausage in pan, add onion and cook until translucent. add garlic and cook 1-2 minutes. deglaze the pan with vodka. add tomatoes and sour cream, parmesean , and dried parsley and heat through. once pasta is cooked al dente, drain and toss with sauce mixture. top with extra parmesean, fresh basil. enjoy!

Serving Size: 1 box pasta makes 4-6 servings for main course, 8 for side dish
