Ingredients

    Bisquick mix, soy milk, flax meal, vanilla flavoring, coconut oil for the pan

Tips

The flax meal/water mix substitutes the egg (as every vegan and vegetarian probably knows) but *if* you happen to have kids who're iffy about the tiny brown specs in their pancakes, you can also simply use 1 tsp egg replacer mixed with 2 Tbsp water OR 1 Tbsp cornstarch mixed w/2 Tbsp water.
I like using flax meal for the omega 3 benefit. ;)

Instead of the vanilla flavoring one can use any other flavor, of course!

These pancakes freeze well. To quickly de-frost just put in the microwave for ~2 minutes on high, done. :)


Directions

Mix 1 Tbsp flax meal w/3 Tbsp water, set aside and let thicken for ~1 minute.
Mix Bisquick mix w/soy milk (or any other plant milk), add 1 tsp vanilla flavoring, stir.
Add flax meal/water mix and stir again.

Heat a small amount of coconut oil in the pan or griddle, pour with a 1/4 c measuring cup pancakes onto the pan (my fan fits 3 at the same time) or onto griddle, flip after ~2 minutes and cook for another ~2.

Serving Size: Makes 9 pancakes (using a 1/4 c to pour 1 pancake)
