Introduction

Simple but delicious potato salad! Simple but delicious potato salad!
Number of Servings: 8

Ingredients

    6 medium-large red potatos (diced)
    4 stalks celery (finely chopped)
    1/2 large onion (finely chopped)
    4 large hardboiled eggs (chopped)
    4 regular sized dill pickles (chopped)
    1/2 cup relish (I use Heinz)
    1/4 cup Light Mayo (I use ShopRite brand)
    1/4 cup yellow mustard
    1 tbsp. Creamy Horseradish (I use Inglehoffer)

Directions

Bring large pot of water to a rolling boil and add diced potatoes (you will boil for a total of 20 minutes).
-After 10 minutes have passed, add your eggs (IN THE SHELL!) as to create hardboiled eggs, and boil for another 10 minutes.
-TOTAL BOILING TIME IS 20 MINUTES!!!
-In a large mixing bowl combine all other ingredients.
-Once potatoes and eggs have finished boiling and have cooled, strain them, and let them sit for at least 20 minutes to cool.
-Peel cooled hardboiled eggs and roughly chop.
-Add potatoes and hardboiled eggs to mixing bowl and combine with other ingredients.
-Enjoy immediately, once cooled, or refridgerated as leftovers!
