Number of Servings: 12

Ingredients

    1 C Oatmeal
    1 C Wholegrain Rye Flour
    1/2 C Brown Sugar, packed
    1 tsp Baking Powder
    1/2 tsp Salt
    1/2 tsp Cinnamon
    1/2 C Reconstituted Raisins
    1 large Egg
    2 Tbs Salad Oil (Soy or Canola)
    1 C Yogurt (I use Dannon Light & Fit Vanilla Yogurt)
    1/4 C Almond Milk (I use Blue Diamond Vanilla)

Tips

Add dates, coconut, dried fruit, nuts, or wheat germ for extra goodness. Substitute applesauce for yogurt when needed.


Directions

Mix egg, oil, milk and yogurt. Separately mix the dry ingredients until smooth. Stir in raisins and wet mixture. Spoon into 12-spot muffin tin, with paper cups or oiled. Bake at 375 for about 22 minutes. Cool & EAT.
