Ingredients

3 lbs pork shoulder/boston butt
1 can Coca-Cola
1 bottle of BBQ sauce
1 cup quick cook grits
3/4 cup reduced fat cheddar cheese
1 cup skim milk
1 cup water
.5 tsp salt
.25 tsp black pepper
Tips
Once roast is finished in slow cooker, skim off fat from top of the sauce. Spoon pork over cheese grits, and spoon sauce over pork.
Directions
Place pork shoulder in slow cooker with bbq sauce and 1 can Coca-Cola. Cook on low for 8-10 hours. Prepare grits when ready to serve pork. To prepare grits, combine milk, water and salt in a saucepan over medium heat; heat until almost boiling. Reduce the heat to low, whisk in grits and cook, whisking constantly, until they start to thicken, 3 to 4 minutes. Remove the pan from the heat and whisk in 1/2 cup cheese. Cover and let stand until most of the liquid has been absorbed and the grits are creamy, 2 to 3 minutes. Divide into bowls, sprinkle with the remaining cheese and serve.
