    4 1/2 lbs chicken legs & thighs, skin removed
    1 28-oz can crushed tomatoes
    1 28-oz can diced tomatoes
    16 oz fresh mushrooms, sliced
    1/2 c red wine
    2 c vegetable or chicken stock (low sodium), or water
    2T basil
    2T oregano
    4 bay leaves

Tips

Although legs & thighs have more calories than breasts, they also have more flavor


Directions

Remove skin & as much fat as possible from chicken & cut leg from thigh. Put in crockpot with all the other ingredients. Walk away for 8 hours. Serve with sprinkle of parmesan over wide noodles.
