    2 chicken breasts, bone/skin/fat removed, cut into 1-inch pieces
    1 tbsp olive oil
    1 cup salsa
    1/2 cup shredded sharp cheddar cheese
    1/4 cup nonfat Greek yogurt
    Garlic powder
    Lemon pepper
    Penzey's Spices Turkish Seasoning


This dish goes well with corn roasted in the husk. I just put the corn in the oven alongside the dish and everything was ready at the same time. :)


Preheat oven to 375F. Grease a Pyrex pie plate with olive oil.

Put chicken pieces into pie plate, turning to coat with oil. Sprinkle spices on one side, turn/stir, sprinkle more spices on the over side so the chicken is evenly coated. Put salsa on top, spread around so it covers all of the chicken.

Bake at 375F for 25-35 minutes or until chicken is tender and white all the way through. Top with shredded sharp cheddar cheese, bake for an additional 5 minutes or until cheese is melted and bubbly, but not browned.

Top each portion with a dollop of nonfat Greek yogurt (instead of sour cream).
