Ingredients

    1 cup chopped onion
    1 cup diced muchrooms
    1 cup chopped bell pepper
    1 cup quinoa, cooked
    4 whole eggs
    2 egg whites
    1.2 cup fat-free shredded cheese
    black pepper to taste

Directions

Preheat oven 350 degrees F. Saute onions in cast iron skillet until golden. Add remaining vegetables and cook until soft. Add quinoa. Reduce heat and pour eggs over vegetables. Heat over low heat. When eggs start to become solid, add cheese to top. Heat until the edges is firm. Transfer cast iron skillet from stove to oven until center is cooked.
