Ingredients

Twin Star Red and Yellow Peppers - Frozen Bag to Steam
2 Slices of Velveeta
1 lb Ground Turkey
4 Tbsp Ketchup
1 2-Cup Package Uncle Bens Ready Rice (Whole Grain)
3 Tbsp Cider Vinegar
1 Can Del Monte Garlic and Olive Oil Diced Tomatoes
1/2 Cup Shredded Cheddar Cheese
Parmesan Cheese to taste
Directions
The peppers and the rice cook in the microwave. While those are cooking, I brown the meat and add the cider vinegar. The meat usually has no grease left, so just add in the tomatoes. Stir in the rice.
Cover bottom of a 9x9 pan with the microwaved peppers, tear the cheese slices and put over the peppers. (I only do this to help the casserole stay together, it doesn't really add much flavor - omit if you want!) Pour the meat, tomato and rice mixture on top of the peppers. Top with the shredded cheddar and parmesan cheeses.
I usually put this in the oven for about 20 minutes at 350. All the food is cooked so you really only need to cook it for as long as it takes to melt the cheese!
