Ingredients

    3/4 C Ripe Banana
    3 large eggs
    1/2 C Plain low fat greek yogurt (I used Chobani vanilla)
    3/4 C Soy Flour ( you can use oats or Coconut flour here too but it may alter the nutritional values a bit)
    2 scoops (1/2 C) Any protein powder, I used vanilla
    1/4 C Baking Stevia
    1 tsp Baking Powder
    1 tsp Baking Soda
    1/2 tsp Cinnamon
    I also put in a bit of banana extract because my family loves banana.

Tips

I created these from another version using oats for my kids so they can get a little more protein in their diets, I have made them with chocolate chips, banana and blueberry so far. I will also try apple spice and use coconut flour to keep them Paleo friendly as well. Great tasting muffin.


Directions

Mix dry ingredients together except walnuts, mix wet ingredients together, fold wet ingredients into dry ingredients, fill muffin tins sprayed with cooking spray 3/4 full, bake at 350 for 13 minutes

Serving Size: Makes 12 muffins
