Ingredients

    2 cucumbers, peeled and cubed
    2 medium tomatoes (I use the big vine ripened ones, if you use Roma, go for 3, or about two cups)
    1 cup shredded mozzarella
    2 cups prepared garbanzo beans
    1/2 cup fat free italian dressing

Tips

I make lots of variations on this. I like to top it with chinese noodles or substitute whole wheat pasta for the beans. It's good with a little cubed salami, or with other cheese, such as feta. I always use cucumbers, tomatoes, and dressing, and whatever else goes into it is based on what is in the fridge.


Directions

Garbanzo beans can by cooked from dry or canned. I cook mine, so if you make them from dry, ensure you cook them ahead of time and that they have chilled.

Combine all ingredients. Serve cold.
