Delicious chicken casserole topped with a stuffing mixture. Delicious chicken casserole topped with a stuffing mixture.
Number of Servings: 6


    1 whole chicken or 4-5 breasts
    1 can cream of chicken soup
    1 cup skim milk
    1/2 cup chopped onion
    1/2 cup chopped celery
    8 oz Pepperidge Farm Herb Stuffing
    14 oz Chicken Broth


Bring large pot of water to boil and add chicken. Lightly boil for 30 minutes. If whole chicken - remove all skin and bones. Reserve liquid if not using canned broth. Cube or shred chicken into a 9 X 13 casserole dish. Mix together soup and milk and pour over chicken. Pour stuffing into a mixing bowl. Saute onion until tender and add to stuffing. Add broth to stuffing and stir until moist. Spread stuffing mixture on top of chicken. Bake at 350 degrees for 30 minutes. Makes about 6 servings.

Can further reduce calories by usng low fat and sodium soup and broth.
