Ingredients

Chicken Breast Boneless and Skinless 40 oz or 2.5 lbs
Sun Dried Tomatoes 1 cup
Onions (Sweet) 2 Large
Garlic 4 Heads or about 40 Cloves
Extra Virgin Olive Oil 10 Tbs
Pasta Whole Wheat Penne 1 Lb 2oz
Parmesan Cheese Grated 1 Cup
Directions
Prep and cook time varies...I roast chicken and garlic, while re-hydrating tomatoes, caramelizing onions and cooking pasta.
Re-hydrate tomatoes by covering with boiling water and let stand for 30 mins. Drain off water and toss with 2 tbs olive oil.
Roast chicken in shallow pan in 400 degree oven for 30 mins or until done. Cut chicken into bite size pieces.
Remove tops of garlic heads. Place in shallow pan drizzle with 2 tbs olive oil. Roast in 400 oven for 30 mins. Let cool and remove cloves.
Slice onions thinly. In a large skillet saute in 2 tbs olive oil until caramelized.
Cook pasta according to directions. Drain and toss with remaining olive oil.
Combine ingredients and toss with Parmesan Cheese.
